干煸豆角

主料：豆角

辅料：葱，姜，蒜，干辣椒，红花椒

调料：植物油，盐，味精，生抽，胡椒粉

&nbsp;

1.  豆角去掉两端，切成5厘米左右的段，洗净，沥干水分
2.  大葱、姜、蒜切碎
3.  干辣椒、花椒洗干净，泡几分钟，防止炒糊
4.  锅烧干，放入约25ml油，放入豆角，开中小火煸炒，

至表皮发皱，生豆角味变得比较淡，豆角发蔫，盛出

1.  再适量加油，放入辅料，中火炒十几秒，炒出香味，豆角回锅
2.  调味，适量味精、胡椒粉和生抽，盐要比正常多一倍，因为豆角“油盐不进”，翻拌几下出锅
